Every year, during the height of summer, tea grown in the mountains is hand-picked and fermented. The process can take weeks, up to months, depending on the weather. Once fermented, the leaves are left out in the sun to dry before becoming ready to be served. The resulting tea lends a light aromatic flavour, resonant of the mountains from whence it came, swirling in every cup.
