Two different totals, and why they differ
Each platform page shows a worldwide store count and a tracked count. The worldwide figure covers every live store on that platform in the dataset. The tracked figure covers only the countries large enough to have their own page, so it is always the smaller of the two.
Wix, for example, has 340,613 stores worldwide but 237,036 across the 28 countries where it clears the reporting threshold. Percentages on a platform page describe the tracked population, because that is what they were measured across.
